Soak the wood chips in water for 30-60 minutes to prepare them for smoking. Remove the wood chips from the water and place them in an aluminum tray or a special smoking box. If using a tray, it is recommended to make a few holes in the bottom to allow heat to circulate freely. On a charcoal grill, place the tray or box with the wood chips directly on the hot coals. If using a gas grill with a smoker box, place the tray inside according to the grill's instructions. If there is no smoker, place the tray in a corner under the grill before turning on the gas. When the wood chips begin to smoke, add the desired food to the grill. To optimize the cooking process, close the grill lid and allow the food to smoke and cook in a closed atmosphere.
